Farm-to-table favorite Root Down made a splash in August 2013 when a spin-off restaurant festooned with living walls opened in Denver International Airport’s Concourse C. Nailing down the plant mix took more than a year, though. (Seems security-conscious terminals are tough on growing things.) Now, however, the likes of heartleaf philodendron and chocolate mint are thriving, lit by a chandelier made from old globes. It’s almost enough to make us miss our flight. Almost.
